Foodie Fodder Feasting Friday: Jammy Jams


Jams and marmalades don't have to be laden with granulated sugar if you have enough citric acid in the fruit used. A bit of research can result in everyone having a tasty treat.

YUM! 

Three Citrus Marmalade

Ingredients: Grapefruit, two lemons, three or more oranges sugar and water.

1. Rinse the fruit and chop finely, remove pips and add to a large saucepan of water.

2. Add sugar to taste and bring to a simmer where it bubbles gently.

3. Leave to reduce down.

Citrus fruits don't normally require pectin to help make things set.




The less citrus the more sugar you'll need and probably a bit of pectin.
(Available at most supermarkets as they say!)

Quantities to suit your tastes.



Summer Berry Jam

Ingredients: Blackberries, sugar, water, plums, raspberries, pectin.

1. Rinse the fruit in cold water then put them in a large saucepan of water.

2. Add sugar to taste and bring to a simmer where it bubbles gently.

3. Leave to reduce down.

4. Add pectin if the jam is not setting due to lack of sugar.

And finally for today, something a bit special...

Cherry and Port Jam

Ingredients: Cherries, one orange, sugar, star anise, port and water.

1. Remove stone and pips from fruit.

2. Finely dice the cherries and place in a pan with lots of sugar, a large splash of port.

3. Add the zest and juice of the orange, one star anise; keep on a low heat until it reduces down.

4. Remove the star anise before spooning into jam jars.
